After pressing, the juice is immediately transferred to the tartar without debubbling. In order to preserve the delicate characteristics of Chardonnay, the grapes are fermented and aged for 7 to 8 months in the barrels before being bottled and undergoing a long secondary fermentation and aging in the cuvée. No antioxidants are added. The Chardonnay has a beautiful minerality and remarkable texture, with a long finish from the aging process.
