The vineyard faces northeast on clay-silex soil. Harvested in cool temperatures before the sun comes up, the wine is cold fermented at 16-18 degrees for 3 weeks and aged on its lees for 2 months. Slightly chilled, it is recommended with appetizers such as asparagus, oysters, and charcuterie.
