Twelve plants were carefully selected to create an authentic French gin. Thyme, rosemary, oregano, lavender, and juniper berries are grown organically on the farm. Spices such as pink pepper, cardamom, and citrus are sourced from contract organic farmers. The plants are distilled fresh and the citrus fruits are peeled in the morning, which adds a powerful aroma to the gin. Grain alcohol is mixed with spring water from the farm and aromatic plants are added. Distillation is slow over 8 hours to extract the delicate and complex nectar of the plants.
