After direct pressing and cold stabilization for 48 hours, the wine underwent alcoholic fermentation in tanks and barrels. The wine is an assemblage of 80% wine aged for 5 months on lees in barrels (including 5% new oak) and 20% wine aged in amphoras. This wine has the liveliness of Sauvignon Blanc and the complexity and volume of sur lies.
