Among the clay-limestone soils of Saint-Martin, there is an area with good aeration where Cinsault vines, with an average age of 15 years, are grown. This age of the vines and the well-ventilated soils allow for a fresh and elegant wine. Cold fermentation (14°C) in concrete tanks for 10 days. This is a beautifully fresh Blanc de Noirs with a delicate, deep aroma reminiscent of wild strawberries and blackcurrant buds.
