The juice is allowed to ferment spontaneously in tanks. After fermentation, the cider is distilled in the spring. The resulting alcohol is colorless and has floral and fruity aromas. It is then aged in oak barrels for a minimum of six years, where blending gives it Maison Hérout's distinctive style. The goal is to find the perfect balance between fruit and woodiness, delicacy and complexity, and to bring out pristine aromas.
